Peppermint: tomato-mint salad recipe

I base this recipe on a memorable dinner selection at a restaurant at the Inner Harbor in Baltimore.  I suggest eating this salad with fresh grilled salmon while seated outside during sunset!

Ingredients:

1 cup finely chopped fresh mint, divided

1 1/2 cups water

3 1/2 cups granulated sugar

3/4 cup cider vinegar

2 tbsp strained fresh lemon juice

1 pouch liquid fruit pectin
